Happy Holidays everyone! I'm sure most of you probably have your Christmas cookie baking finished. But for those of you that might still need some ideas for the cookies you'll be leaving out for Santa on Christmas Eve, I'd like to share a few of my favorite holiday cookie recipes over the next few days. Today it's German Gingersnaps. A wonderful, spicy cookie sweetened with brown sugar and dark blackstrap molasses. This is a great recipe for the holidays as it fills the kitchen with the traditional holiday aroma of ginger and cinnamon.
What is your favorite holiday cookie recipe?
German Gingersnaps (makes approximately 30 cookies)
Preheat oven to 375°. With an electric mixer cream together:
- 1/2 cup butter
- 1/4 cup vegetable shortening
- 1 cup packed brown sugar
- 1 egg
- 1/4 cup molasses
- 1/2 teaspoon vanilla
In a separate large mixing bowl, blend together:
- 2 1/4 cups sifted flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
Mix the dry ingredients into the molasses mixture. Form the dough into 1 inch balls and roll the dough in:
- granulated sugar
Place the dough 2 inches apart on a baking sheet lined with parchment paper. Bake for 10 minutes. Allow the cookies to cool slightly and then remove from the pan to a cooling rack.
Be sure to set a few aside for Santa!
